Abstract

This chapter provides an overview of starch-based biocomposites with a main focus on their mechanical properties. The chapter first introduces the basic knowledge of starch including its structure and plasticisation behaviour, followed by discussion of the mechanical properties of starch-based materials, starch-based macrobiocomposites, and starch-based nanobiocomposites, with an emphasis on the latter. Not only the changes in mechanical properties as affected by the addition of fillers are summarised, but also the related mechanisms regarding the changes of mechanical properties are discussed in detail.
